Since 1881, Bunnahabhain has always started out the same way, with good quality malted barley, clean pure Margadale spring water and a little yeast. It may not be a beach to rival the Côtes d´Azures, but Bunnahabhain offers the perfect resources to produce the world's best Malt. Bunnahabhain's gentle taste is unique because the fine malted barley is never heavily peated, the source of local natural spring water has run clear for over a hundred years, and the sea-facing warehouses provide the perfect environment for maturing the finest spirit.

Bunnahabhain is now an unchilled filtration spirit, a move which has excited Whisky enthusiasts around the world. It is a privilege to be responsible for the creation of the Bunnahabhain water of life, which after twelve long years, goes into the distinct green bottles. The colour, nose, flavour and consistency will be made up from several different casks, the marriage of which is the role of the Master Distiller. He must match the elements and characteristics of many single casks to the unique taste profile of Bunnahabhain's signature Malt.

Bowmore Distillery, one of the oldest in Scotland has stood on the shores of Loch Indaal, on the Hebridean Island of Islay, since 1779. Its close proximity to the sea is vital in determining the final character of Bowmore Islay Single Malt Scotch Whisky, as is the strict adherence to the traditional production methods handed down to Morrison Bowmore Distillers Ltd in 1963. Bowmore is produced using water from the Laggan River from where it gathers the flavours of the rich Islay Peat, the same Peat that fires the Malt drying kiln.

Paul Pacult, one of the world's most knowledgeable spirits experts has described Bowmore as being in the top echelon of Scotland's whisky operations. Bowmore Distillery is one of an ever decreasing handful of distilleries to produce its own floor malted barley. The barley is still laboriously hand turned, by the Maltman, using the traditional wooden malt shovel. The maltings at Bowmore Distillery are very much alive and part of the production process and for visitors to the distillery, seeing a working maltings floor is a rare and special sight.

Bowmore Single Malt Whisky has won more awards and accolades than any other Islay single malt, including the unprecedented accolade of entry into the Hall of Fame at the San Francisco World Spirits Competition. Bowmore was the first, and remains the only, whisky distiller in the world to be awarded this accolade. Bowmore's close proximity to the sea is vital in determining the final character of the Bowmore Islay Single Malt Scotch Whisky, as is the strict adherence to the traditional production methods handed down.

Balvenie Doublewood Single Malt gains its distinctive character from being matured in barrels of two distinct oaks. During its period of maturation, Balvenie is transferred from a traditional Whisky cask to a first fill Spanish Sherry cask. Each stage lends different qualities to the finished Malt. The pre seasoned barrels soften the Whisky and impart wonderful complexities, the aged Sherry characters build depth of flavour and infuse marvellous richness. A smooth and mellow Malt of sublime nutty sweetness, cinnamon spice and a delicately proportioned layer of Sherry rancio, all before a long, warming finish.

Auchentoshan are the only distillery in Scotland to employ triple distillation and have been renowned amongst a discerning qabal of Malt enthusiasts since 1823. Triple Wood is a very special and unique edition of Auchentoshan, matured in three different types of oak cask. Moving from American Bourbon to Spanish Oloroso Sherry and finally Pedro Ximenez Sherry. Three Wood is a rich, complex Whisky with incredible toffee and sherry oak flavours.

Why does Auchentoshan's flavour stand so far apart? There are two main answers, the skill of Auchentoshan's Mash and Still men, as well as an insistence on ancient methodolgy, wooden washbacks and triple distillation. Auchentoshan is the only distillery in Scotland to employ a third still, every single drop is distilled three times and matured exclusively in American oak Bourbon casks. The result, a Lowland Single Malt Whisky with the sweet aromas of vanilla and coconut, along with the signature smooth and delicate, Auchentoshan taste.

What does it mean to be the only Triple Distilled Single Malt In Scotland? It's more time consuming. It's more expensive. And it's also absolutely unique, no other Single Malt Scotch Whisky goes beyond two distillations for every drop. Why do Auchentoshan persist? The extra distillation takes refinement of spirit to around 81% as opposed to 70%. This dramatically affects the character of finished Malt, arriving at a most subtle Whisky that matures beautifully in a selection of American oak casks which have previously been used for ageing Bourbon.

Arran is one of the few remaining independent distilleries in Scotland. Based at Lochranza on the Isle of Arran, one of the most beautiful and famous in Scotland which lies off the West Coast between Ayrshire and Kintyre. Early in the 19th century there were more than 50 whisky distilleries on Arran, most of them illegal and carefully hidden from the eyes of the taxmen. The malt from Arran was shipped to the mainland and enjoyed by the gentry. It was acclaimed at the time as the best in Scotland, only rivalled by those from the Glen of Livet.

Ardbeg is, perhaps, the most peaty malt whisky in the world - certainly of all the Islay malts. Not to mention beautifully balanced, complex and deep. It's unthinkable now, but in 1981 production ceased and the distillery was mothballed. Happily in 1997, this beautiful malt began to flow again. Uigeadail is a fine drop of Ardbeg that's bottled at cask strength. A marriage of Ardbeg from bourbon barrel and sherry butt which gives a sweet and smokey finish to this malt. Uigeadail is the loch from which all Ardbeg water flows.

There is a dark place on Islay, high above the Ardbeg Distillery, called Airigh Nam Beist (pronounced Arry-nam-bayst), meaning shelter of the beast. No more fitting name could have been bestowed on such an eerie place, where legend has it, something other-worldly lurks, lying in wait. So what measures can be taken to protect local and visitor alike? If you find yourself straying this way, then pray equip yourself with that traditionally reliable antidote to sheer terror, the stiff drink. For it`s truly a wee beastie of a dram waiting to be released!.

Supernova challenges the palate with a smoke and salt explosion, hot, sizzling sensations effervesce with a powerful peaty punch. Black and white crushed pepper pop with chilli and chocolate. Chewy sweet rolling tobacco, linseed oil and newly tanned leather roll backwards on a wave of brininess and burst of lime marmalade. Cigar smoke builds up to a crescendo before drying out to bring dark roast coffee, toasted almonds and liquorice root. Long, deep and powerful, refusing to fade away, warm and drying with tarry peat, cocoa and chill.

Somehow against a backdrop of raiding Norsemen, inter-island clan battles and English taxation, Ardbeg emerged as unquestionably the greatest distillery on earth. Ardbeg Ten Years Old is a very special bottling for the Ardbeg distillery as it is the first non-chill filtered whisky in the Ardbeg range. Chill filtering isn't a bad thing, in fact it created real consistency of product when the whisky industry was a little more hap-hazard than it is today. Ardbeg Ten Years Old is whisky with none of the goodness taken out and as good as straight from the cask.
